Honey Chilli Chicken

This is so tasty I had to share it. It is not my recipe it is a slimming world one but even if you are not on a slimming journey it tastes delicious!! (confirmed by Mr Ormerod). This has the taste of sweet and sour but with a bit of heat.

  • 2 chicken breasts (no skin on and diced)
  • 1 tablespoon lazy garlic
  • 1 teaspoon of lazy chilli (or chilli flakes)
  • 500ml diet 7up
  • 5 tablespoon of sweetener (this can be substituted for honey, I used 1 tablespoon of honey as it was far too sweet for me with sweetener)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soya sauce
  • 5 tablespoons tomato puree
  • 2 peppers cut into slices
  • Handful of mushrooms cut in half
  • 2 spring onions

  • Coat the chicken breast in the garlic and chilli and leave to marinade for an hour
  • Mix the 7up, soya sauce, Worcestershire sauce, sweetener/honey and tomato puree together
  • Cook the chicken and add in the peppers and mushrooms
  • Add in the sauce and leave to simmer until reduced (around 40/45 minutes)
  • Towards the end add spring onions
  • Serve with rice
