This is a very simple, basic tomato sauce I make. Its nothing fancy and it’s not going to win awards but I like to use it on things like pasta and halloumi. It’s also nice to use in a vegetable soup, just add a few more veg of your choice and blitz it up!
This makes enough to easily cover pasta for 3 people, just add more ingredients for more people!
- 1 tin chopped tomatoes
- 1 small 160ml can of coconut milk
- 1/4 teaspoon garlic (less if you’re not a big fan of strong garlic taste)
- 1/4 teaspoon Italian herbs
- 1 vegetable stock cube
- 1/4 teaspoon sugar
- Chilli flakes (however much you like your heat)
Literally throw all of the ingredients in a pan and heat up. Once heated you can either serve as it is or you can blend it up to make it a smoother sauce.
